The holidays are a time for enjoying delicious meals and treats with family and friends. However with all that feasting, it’s common to have plenty of leftovers after the big meals are done. If you followed a keto diet this holiday season you may find yourself with a lot of extra turkey meat and wondering what keto-friendly recipes you can make.
Not to worry – there are plenty of delicious ways to use up turkey leftovers while staying low-carb. Here are 13 of my favorite keto turkey leftover recipes to try this holiday season:
1. Keto Turkey Casserole
This hearty casserole is a great way to use up shredded turkey meat along with any extra veggies you may have on hand. Simply cook up some chopped veggies like broccoli, cauliflower, mushrooms etc. in butter or olive oil. Then mix in shredded turkey meat and pour over a cheesy “white” sauce made with cream cheese, heavy cream, and parmesan. Top with more cheese and bake until bubbly. It makes for a comforting, flavorful meal.
2. Turkey Soup
Soup is one of the easiest ways to transform leftovers into something new. Sauté some onions and garlic in butter or oil, then add turkey meat, chicken broth, and any veggies you want like celery, carrots, zucchini etc. Let it simmer until the veggies are tender. You can keep it simple or add spices like thyme or rosemary. Garnish with fresh parsley. Bonus points if you use the turkey carcass to make your own bone broth!
3. Turkey Salad Wraps
Shredded turkey makes a great salad filling for lettuce wraps or rolls. Mix together diced turkey, mayo, mustard, chopped celery, red onion, dried cranberries, and chopped almonds or pecans. Wrap in lettuce leaves for a quick, easy keto-friendly lunch or snack.
4. Turkey Enchiladas
One of my favorite ways to use up leftover turkey is in cheesy enchiladas. Simply fill tortillas with shredded turkey, enchilada sauce, cheese, veggies, etc. and bake until hot and melty. It gives the turkey a tasty Mexican flavor twist. Using low-carb tortillas keeps this meal keto-friendly.
5. Turkey Kale Soup
This healthy soup combines protein-packed turkey with nutrition-packed kale. Sauté onions and garlic in olive oil or butter. Add shredded turkey chicken broth chopped kale and seasonings. Simmer until kale is tender. Top with shredded Parmesan cheese and red pepper flakes for a little kick.
6. Turkey Pepper Jack Meatballs
Ground turkey makes tasty keto meatballs, especially with the addition of spicy pepper jack cheese. Mix together ground turkey, shredded pepper jack cheese, eggs, almond flour, and any seasonings you want. Form into balls and bake until cooked through. Serve with low-carb marinara sauce for dipping.
7. Turkey Bacon Ranch Pizza

Don’t throw out that leftover turkey carcass! Simmer it in water with some vinegar to extract nutrients and make a batch of turkey bone broth. Add veggie scraps for extra flavor. Use the nourishing broth for soups, stews or just enjoy sipping it on its own.

Slice or shred leftover turkey breast and stir fry with sliced veggies like bell peppers, mushrooms, snap peas, etc. Cook in olive oil or sesame oil and season with coconut aminos, ginger, garlic and red pepper flakes. Serve over cauliflower rice for a low-carb meal.

So, what about the keto Turkey Tetrazzini Skillet recipe?
This is probably one of the most accidental recipes I’ve ever posted here. No, really.
“Well, I have this half-chunk of mozzarella, leftover turkey from Thanksgiving (or Easter, or whatever it was), a bunch of parsley that won’t last past tomorrow, and some mushrooms my kids won’t eat anyway…”
And then some Pinterest searching that ended in just making something up. Later, I looked again and saw that there was something called turkey tetrazzini that had the same things plus pasta.

So there you have it. Now you know my wackadoodle process of creating recipes for my site.
Truth be told, that’s only part of the story. I’m a single mom of 4 kids, going to school full time for my master’s degree.
So, yeah, I really just have to throw things together sometimes and see what sticks. My kids love me. Ha!.

This turkey tetrazzini recipe in a skillet really couldn’t be easier. And instead of finding a replacement for the pasta, I of course just left it out. You won’t miss it. It’s THAT good.

Keto Turkey Tetrazzini in a Cast Iron Skillet
One of my favorite things about my cast iron skillet is how heavy it is. Ha! You know I’m kidding.
I love that I can start a meal in the skillet, LEAVE IT IN THE SKATEN, and then finish it in the oven, with the lid on top if I need to!
If that’s not a testament to my laziness, I don’t know what is.
Seriously, though. I LOVE my cast iron skillet. That’s why I asked my designer to use my heavy, clumsy friend in my awesome Keen for Keto logo.
Sometimes I feel like my cast iron love is a little weird. People love abandoned puppies with half of their tails missing, a limp, and some kind of goo coming out of their eyes.

Instead of being put away in the cabinets, my nice stainless steel pots and pans stay out in the open and get dirty on the stove all day and night.
