Big Easy Turkey Cooking Times
Cooking time in the Big Easy depends on two factors
- Turkey weight
- Whether it is fresh or frozen
Follow this simple guide for perfect Big Easy turkey every time:
Fresh Turkey
For fresh, unfrozen turkeys, the basic rule is:
- 10 minutes per pound
So a 12 lb turkey takes about 120 minutes, while a 20 lb turkey takes 200 minutes. Check the thickest part of the breast and thigh for doneness. It should register 165°F on a meat thermometer when finished.
Here are estimated cooking times for various fresh turkey weights:
- 8 lb turkey: 80 minutes
- 10 lb turkey: 100 minutes
- 12 lb turkey: 120 minutes
- 14 lb turkey: 140 minutes
- 16 lb turkey: 160 minutes
- 18 lb turkey: 180 minutes
- 20+ lb turkey: 200+ minutes
Frozen Turkey
For frozen turkeys, extend the cook time to:
- 15 minutes per pound
The frozen bird takes longer to heat through to the safe 165°F internal temperature.
Cooking times for frozen turkeys:
- 10 lb turkey: 150 minutes
- 12 lb turkey: 180 minutes
- 14 lb turkey: 210 minutes
- 16 lb turkey: 240 minutes
- 18 lb turkey: 270 minutes
Check the internal temp in multiple places before removing from the Big Easy. If it hasn’t reached 165°F, continue cooking until fully thawed and cooked.

Carve turkey and serve immediately for maximum juiciness.

Inject With A Purpose
When injecting this savory turkey on the Char-Broil Big Easy it’s important to be consistent. You don’t want to bite into huge pockets of injection in one bite, only to get nothing in the next. Don’t rush the process. Take your time and get the injection in everywhere, from just under the skin, to deep inside the breast meat.
I use a heavy duty injector that has larger holes for injecting liquids that have big chunks of ingredients. Even so, it can be challenging and sometimes clogs. I recommend grinding your spice ingredients first so they are fine enough to easily flow through the injector.
