An Overview of Bojangles’ Famous Dirty Rice
Bojangles’ dirty rice is a rice-based dish flavored with a blend of spices, vegetables, and pork sausage. It gets its signature “dirty” look from the chunks of pork sausage mixed throughout. The pork sausage used is the same breakfast sausage used in Bojangles’ biscuit sandwiches.
In addition to the pork sausage, the dirty rice contains a mix of traditional Cajun spices and seasonings This includes cayenne pepper, black pepper, onion, bell pepper, garlic, and other herbs and spices The exact blend remains a secret proprietary recipe. But it delivers a spicy, highly seasoned flavor that has made the dirty rice a customer favorite.
Beyond the pork and seasoning, the dirty rice uses a simple base of white long grain rice. The rice soaks up the Bold flavors of the sausage, vegetables, and spice blend. Chicken broth is also used to lend moisture and extra flavor. Fresh parsley adds a pop of color and brightness at the end.
The result is a rice dish loaded with texture and anesthetizing mélange of flavors. It’s a hearty, highly seasoned comfort food side.
The Role of Pork Sausage in Traditional Dirty Rice
To answer the question at hand – yes, Bojangles’ signature dirty rice does contain pork sausage. The pork plays an essential role in creating the authentic dirty rice experience.
Pork sausage has long been a defining ingredient in traditional Cajun and Creole dirty rice. Dirty rice originated as a Cajun dish in Southern Louisiana. In this region, locally-made spicy pork sausage was commonly used as the starring protein.
The fatty, savory pork chunks lend moistness, rich meaty flavor, and those signature little “dirty” bits throughout the rice. While other proteins can be used, pork remains the most authentic choice for true dirty rice.
Bojangles stays true to these traditions and Cajun flavors by using signature breakfast pork sausage in their famous dirty rice recipe. For those avoiding pork, this means Bojangles’ version may not align with certain dietary needs. However, the pork-based dirty rice remains a beloved menu item for good reason – it’s delicious!
Alternatives for Pork-Free Diners
For those following pork-free diets, the dirty rice isn’t an option on the Bojangles menu. However, the chain offers a solid range of other menu items to enjoy.
On the breakfast menu, consider a biscuit sandwich without bacon or sausage – the egg and cheese biscuit makes a satisfying pork-free choice. You can also opt for boneless chicken items like the Cajun Filet Biscuit or Grilled Chicken Sandwich. Sides like mac & cheese, seasoned fries, and green beans round out tasty pork-free picks.
At home, the dirty rice can be recreated a few ways to suit pork-free needs:
-
Use ground turkey or chicken sausage
-
Swap in cooked ground beef or turkey for a meaty texture
-
Go meatless by boosting veggies, beans, or peas
The blend of spices is key to nailing that bold dirty rice flavor. So be sure to use plenty of Cajun seasonings and hot peppers to spice things up. With a few tweaks, you can enjoy a tasty pork-free dirty rice without sacrificing on flavor.

What is Dirty Rice?
Dirty rice is simply rice that has lots of “stuff” in it to make it flavorful. Typically with sausage, but you could also use ground beef, pork, or turkey.
Lots of spicy flavors along with bell peppers and onions make this dirty rice special.
You can use any kind of rice, but I like brown rice because it makes the dish taste better. But you can also use white rice or wild rice if you like.
You can get your rice cooking first before starting your meat if its a long-cooking rice.
The sausage, bell pepper, cayenne pepper, garlic, and paprika in this recipe give it a real, hearty, and tasty flavor.
You can serve dirty rice as a main dish with a salad or as a side dish with pinto beans and corn bread. It’s also great for potlucks.
3 cups cooked rice
1 pound ground breakfast sausage
½ large red bell pepper, chopped (about 1 cup)
1 small onion, chopped (about 1 cup)
¼ teaspoon cayenne pepper (more if desired)
1 Tablespoon garlic, minced (about 3 large cloves)
1 teaspoon smoked paprika (or sweet if you want less spicy)
½ teaspoon black pepper
In a large heavy skillet, cook sausage until browned (about 10 minutes).
Remove all but about 2 Tablespoons fat.
When the pan is hot, add the oil and stir in the bell pepper, onion, garlic, cayenne, paprika, and black pepper.
Cook 10 minutes or until onions are translucent and soft.
Add cooked rice and reduce heat to low.
Stir and heat 5 more minutes (uncovered).
For a fuller flavor, I like to use brown or mixed rice, but you can use white rice for this recipe, even the quick kind. Use whatever rice you have on hand or whatever you like. It will be tasty and fabulous!.
For the sausage, use the ground sausage that you prefer. It’s up to you if you like it spicy or mild. This recipe works well for a lot of different tastes and cooking styles.
Keep in mind that the dish will be hotter with cayenne pepper and smoked paprika added to it than with just the sausage.
My sausage was fairly mild, so the cayenne took the heat up a notch. If you use spicy sausage, you may want to leave the cayenne out.
If your sausage is already spicy, you may choose to use sweet paprika instead of smoked paprika. This will depend on how spicy you want your dirty rice to be.
I hope you and your family love this copycat Bojangles Dirty Rice recipe. Dont forget to share, print, and save to your Pinterest for making soon.
You can tell me how yours turned out and what kind of sausage and rice you used below. Did you spice it up or make it mild? I want to know!.
Dirty Rice and Beans
You can add a can of drained black beans (or any other beans you like) to make this dish even heartier.
Even though Bojangles doesn’t use beans in their recipe, they are a great way to change things up when you already have a great recipe.
Everyone in my family loves dirty rice and beans as a main dish. It has meat, beans, rice, and seasonings; all it needs is bread and a green vegetable or salad on the side.
You can adapt the beans that your family prefers. That’s why I chose black beans: I thought they would make this recipe look and taste better.
However, you can certainly add pintos, kidney beans, or black eyed peas if youd like.
Let me know in the comments if you made your dirty rice with beans or without!

A copycat recipe for Bojangles iconic Cajun dirty rice, made with sausage and a favorite throughout Southern states, especially the Carolinas! What kind of rice does Bojangles use?
Like most restaurants, Bojangles uses converted rice which is rice that’s parboiled in the husk, dried then “shucked” to remove the husk. It’s more nutritious but I’ve never liked the texture so I used traditional uncooked long-grain white rice.
