I LOVE breakfast food. You might be able to tell from all the breakfast recipes on this site. I have ones for English muffins, bialys, egg scrambles, and even Montreal-style bagels. As Thanksgiving gets closer, I’ve been thinking about how to make my favorite meal of the day taste more like Thanksgiving. And if you give me the chance to make what might seem like a simple or boring breakfast food my own way (especially for the holidays), I’ll take it. If you ask me, smoky maple turkey bacon is the best way to bring Thanksgiving into breakfast. Maple is one of my favorite fall or Thanksgiving flavors, and of course, it’s a breakfast food.

TURKEY BACON OVER REGULAR BACON?

For this smoky maple turkey bacon recipe, I chose to use turkey bacon for two reasons: first, it makes me think of Thanksgiving, and second, it seems a little healthier than regular bacon. And right now, my boyfriend Gabe and my brother Ben both have high cholesterol, and I cook breakfast for them. Now I’m not arguing that turkey bacon is necessarily super good for you either. It’s still a processed food, and really high in sodium. But it’s probably slightly healthier than traditional bacon, and fine when eaten in moderation.

But no one is fooling anyone here, turkey bacon is not nearly as good as regular pork bacon. So, it’s important to spice up turkey bacon. In this recipe, I did just that by adding maple syrup and smoked paprika. I started by putting a lot of maple syrup on each slice of bacon. Then I added smoked paprika and black pepper on top. Then I baked the bacon as opposed to frying it. It’s just easier to bake bacon (especially for a crowd). There are places where turkey bacon gets a little flabby when it’s fried, so baking it makes the bacon crispier. It’s also less likely that the maple syrup will burn, and the syrup and spices will stay on top of the bacon where you want them.

The result is a slice of bacon that’s perfectly crisp with a delicious balance of flavors. It has smoke from the smoked paprika, salt from the cured bacon, heat from the black pepper, and sweetness from the maple syrup. To really make it feel like Thanksgiving breakfast, I served my smoky maple turkey bacon with pumpkin waffles, which are one of my favorite fall foods from Trader Joe’s. With any breakfast (or in my breakfast calzones), this bacon goes well. You could even have breakfast for dinner.
