All About LAYERING to Make the PERFECT Irish Bacon Sheet Pan

First, cut the potatoes into small pieces. Then, add 2 tablespoons of olive oil on top. Sprinkle with salt, ground mustard, pepper and coriander, toss in your seasoning mixture. Layer your full sheet pan with parchment paper, then spread potatoes onto sheet pan. Bake at 425 for the first 30 minutes.

You will also cut up half a green cabbage into bite-sized pieces while the potatoes are baking. Toss with 1 tbsp olive oil and then season with paprika, salt, pepper and ground mustard. Take potato sheet pan out of the oven and now spread cabbage over the sheet pan. Turn oven down to 400 degrees. Bake for 15 more minutes.

You will lower the oven temperature again to 375 degrees after 15 more minutes of baking the cabbage and potatoes at 400 degrees. Then slice up your Irish Bacon into strips or bite sized pieces, depends on your preference. Then bake for 12 minutes NO MORE. If you leave the bacon in there for too long, it will dry out.

The last thing you need to do is add an egg on top of your Easy Irish Bacon Sheet Pan. Make the eggs however you like and then bake them.
