Their Mango-Chili Chicken breast is one of the more impressive healthy options you can find at a chain restaurant. It is a lean protein with just the right amount of fruit and spice. It is super tender and comes with a healthy broccoli side.

It also comes with rice, but it’s not low-glycemic whole grain rice, so I switch it out for the asparagus. As usual, I ate too many chips and salsa there, so one good thing about making it at home is that I don’t have to buy unhealthy snacks like that. If I have chips, I have a more whole grain version at home. Plus, you can reduce the sodium levels significantly when you make it at home. I was really intimidated in trying to copy this recipe because it really is amazing. As we got it, I thought the dish looked and tasted as good as it would at any 5-star restaurant.

I didnt think I would be able to reproduce it with my skill set until I found guidance from this blog post done by a registered dietitian. I was able to reproduce the tenderness by splitting each chicken breast in half and grilling over a flame for 5 minutes on each side. Lastly, as the title suggests, I substituted Thai peppers and Thai chili powder for the western version. Birds eye chilies, birds eye peppers, and Thai peppers are all names for Thai chilies.   • Add as much or as little of the garnish as you’d like before serving. For some reason, I cover that crap in mango pico de gallo. But not too much Thai pepper, because my wife can handle it better than I can. She can eat them by themselves.
