What You’ll Need To Make Shrimp Salad
You should buy frozen shrimp for all of my shrimp recipes because most of them are flash-frozen right after being caught. Unless you live near the water, most of the “fresh” shrimp in the seafood case is actually frozen shrimp that has been thawed. For the freshest shrimp, it’s best to buy frozen shrimp and defrost it yourself. It’s best to let it defrost overnight in the fridge, but if you’re in a hurry, you can run cool water over the shrimp.
I also recommend buying shrimp labeled “shell-on and deveined. “The shrimp tastes and feels better when cooked in their shells, and it’s easier to buy shrimp that have already been deveined.” If you need to devein the shrimp yourself, cut the shell along the back of the shrimp, from the head to the tail, with kitchen shears. Then, use a paring knife to remove the vein.
Begin by bringing a pot of water to a boil.
After you add the shrimp, cook for about 1 1/2 minutes, or until they are bright pink and fully cooked. The water doesn’t have to come back to a boil.
Put the shrimp in a colander and drain them. Then, put them right into ice water to stop the cooking process. Let sit until chilled, about 15 minutes.
Peel the shrimp and set aside.
In a medium bowl, combine the mayonnaise, Old Bay, wine vinegar and Worcestershire sauce.
Add the cooked shrimp, celery and white and light green scallions.
