Buying Tripe From the Store
Before you can cook tripe, you need to get some!
Tripe is easy to find at any Asian market because it is used in so many Asian dishes. I had eaten tripe more than once before I even knew what it was! Tripe is often found in Asian soups at restaurants (see picture above).
If there are no Asian markets in your area then ask your local butcher or farmer.
You will want to be sure to buy tripe that has already been cleaned. It should be a whitish color like in the photo below. If it’s greenish or gray then you will have to clean it yourself. I’m not willing to do that!.
One thing to remember about tripe is that it gets a lot smaller when it’s cooked. So be sure to buy enough for your recipe. If a recipe calls for 8 ounces of tripe, buy 16 ounces to cook as a rough guide.
Also be sure that you are getting the honeycomb tripe. It is the best one for most home cooking purposes and tripe recipes. (Notice the honeycomb pattern in the picture below).
