Welcome to cooking! I sympathize with your frustrations over ambiguities. Dont worry! Cut the chicken however you want (or dont cut at all). Diamond Crystal is specified because its less “salty” than other kosher salts. Solution? Use less of another salt. “Good” olive oil just means something other than a $2 bottle thats rancid. Have faith in yourself, your tastes, your abilities. Use a little more of an ingredient you like, less if you dont. And enjoy!.

Just like the recipe said, I used boneless chicken breasts instead of thighs because my wife likes white meat, and I used rice vinegar instead of sherry vinegar. As with many NYT recipes, I find that this would be a stretch to feed 4, even with a whole bunch of swiss chard that I added. maybe we just eat more than a “normal serving” given these delicious NYT recipes! Served with mashed potatoes and pinot noir. Delicious Sunday evening meal!.
