First, use a food processor to turn 1/2 cup of sliced almonds into mostly crumbs, like in the picture below. Then, put the crumbs in a shallow dish like an 8×8 baking dish.

Next, process 4 cups Rice Chex to create 2 cups crumbs OR measure out 2 cups panko-style gluten free bread crumbs. I like Schar brand!

Mix the crumbs with the almonds in the shallow dish. Add a little salt and pepper, and then set it aside.

So, take 1 3/4-pound chicken breasts and cut them into 1-inch strips. Then, put them in a gallon-sized Ziplock bag with 1/2 cup gluten-free flour (or AP flour if you don’t have gluten-free flour) and 3/4 teaspoon salt and 1/2 teaspoon pepper. Shake the bag until the chicken is well coated.
